Ingredients:⠀
⠀
1/2 cup plant milk (almond/oat/macadamia) @buttanuttspreads have awesome options⠀
1/2 cup water⠀
1/4 cup buckwheat, rinsed - purchased @wellnesswarehouse ⠀
Pinch of salt⠀
1/2 tsp sumac (use lemon zest as a substitute)⠀
1/2 tsp cinnamon⠀
1 tbsp almond butter @buttanuttspreads from @wellnesswarehouse ⠀
1/3 cup fresh blueberries⠀
⠀
Method:⠀
⠀
Bring water and milk to the boil in a saucepan. Adding in salt before the buckwheat goes in. Stir slightly and reduce heat cooking with lid on for 10 minutes. ⠀
⠀
Next add in the spices and cook for a further +/- 5 minutes while stirring. ⠀
⠀
When happy with the thickness, remove from the heat and serve in breakfast bowl. ⠀
⠀
Finish off with nut butter and fresh berries! ⠀
⠀

I don’t sweat the small things as much and what grated my carrot before seems trivial and pathetic now. The pressure to ‘bounce back’ and lose the weight is undoubtedly still a thing. So when I read this article by the legendary @ash_fitmom (superhero mom of three and personal trainer), it gave me peace of mind knowing that I didn’t have to be back in lycra strutting my stuff on the prom a few days or even months after I’d just given birth! @nixiinoodle 💕⠀

An almost desperate need to want to look like you haven’t just spent the past 9 months growing a perfect little human. This just seems crazy to me!⠀

The reality is that pregnancy is hard. Childbirth is hard, regardless of whether you have a natural birth or a caesarean section. And once all of that is over, you are then responsible for a tiny human who demands all of your time and attention.⠀

My approach is one of celebrating everything my body has done for me and embracing this post-partum period rather than trying to “bounce back” or look for quick fixes" ⠀

Pea, Zucchini & Feta Fritters 🌱 these are perfect for mamas who are struggling to get their little ones to eat more greens! 🥦🫑🥬🥒 This winner recipe was created by our mama bear @nixiinoodle - it’s quick and easy to prep and delicious for the entire fam! Also works well with spinach and broccoli 🙌 ⠀

Recipe:⠀
⠀
* 2 large zucchini’s (or 4/5 small ones)⠀
* 150g frozen peas⠀
* 100g feta cheese⠀
* 2 medium eggs⠀
* 50ml milk ⠀
* 100g self raising flour ⠀
* Black pepper ⠀
* Tbs of gluten free vegetable stock from @wellnesswarehouse ⠀
* Optional to serve: plain yoghurt with a squeeze of lemon, a splash of apple cider vinegar, salt and pepper and topped with avo) ⠀
⠀
Method: ⠀
⠀
* Grate the zucchini’s using a cheese grater into a large bowl.⠀
* Pop the frozen peas into a separate small bowl, cover with water and cook them in the microwave for 2.5 minutes. Drain the peas and then add them to the grated zucchini’s ⠀
* Chop the feta cheese into small chunks and then add to the zucchini and peas along with a good sprinkle of black pepper and the vegetable stock ⠀
* In the small bowl you have aside, crack the eggs and add the milk to the eggs. Give everything a good whisk to combine and then pour into the large bowl - give all the ingredients a good stir.⠀
* Finally, add the self raising flour to the fritter mix. Mix everything really well to ensure the flour is totally combined into the mixture.⠀
* Now pop a frying pan over a medium heat and add a small amount (1 tsp) or cooking oil or butter. For each fritter, drop one heaped tablespoon of mixture into the frying pan. Then gently squish the mixture with a cooking spatula to flattened it out slightly.⠀
* Cook each fritter for approx 5 minutes on each side until golden and slightly puffed up ⠀
