Vegan Chocolate Mousse 🍫⠀

Made with CHICKPEAS!? Whaaaat?! Created by the talented Jess from @the_culinary_cartel 👩‍🍳rich & creamy 👌 just the perfect dessert for these chilly winter evenings! ⠀

Ingredients: ⠀
⠀
3/4 cup or 180g tinned chickpea liquid ⠀
35g castor (plus 1-2 tsp for the tahini⠀
1/4 tsp vinegar⠀
150 chocolate (at least 70%)⠀
1 pinch salt⠀
1 Tbsp tahini paste ⠀
Cacao nibs for serving (optional)⠀
Dried rose petals (optional)⠀
⠀
Method:⠀
⠀
Place the chickpea liquid and vinegar in a very clean metal or glass bowl. Whip the chickpea liquid for about 5-10 minutes using an electric beater or until the mixture reaches the soft peak stage.⠀
⠀
Slowly add the castor sugar over a period of 10minutes, while beating the chickpea mixture on high. Whip the chickpeas until the sugar is well incorporated and the mixture is light and glossy.⠀
⠀
Mix the tahini with 1 Tbsp cold water, and add sugar to taste. Spoon the tahini into 6 150ml glass jars. Add a sprinkle of cacao nibs on top, if using. ⠀
⠀
Place the chopped chocolate in a microwave safe bowl. Microwave in short bursts, stirring in between, until the chocolate is melted.⠀
Whisk 1/3 of the chickpea mixture into the chocolate until well incorporated. Add the salt and stir until combined.⠀
⠀
Add the chocolate mixture to the chickpea mixture and, using a silicone spatula, gently fold the mixture together until well incorporated, but still light and airy.⠀
⠀
Spoon the chocolate mousse into the glass jars over the tahini.⠀
⠀
Place the jars in the fridge and allow the mousse to set for 3 hours ⠀
⠀
Once set, top with more cacao nibs and rose petals (optional). Serve immediately
