Paleo Pumpkin Waffles For Halloween

Celebrating Halloween this year with a little less sugar in mind? This healthy waffle recipe is a great alternative to the overloaded sugary waffles we all love to scoff down on a lazy Sunday afternoon. Gluten and sugar-free, they are perfect for the kids and for us sugar addicts that need a healthy substitute.

250g of steamed pumpkin
50g bananas
5 eggs
50g coconut flour
20g almond flour
10g ground flaxseed
4g psyllium husk
100ml buttermilk or yoghurt
125ml milk
2tbsp coconut oil
1tbsp vanilla extract
½ salt
1tbsp cinnamon
½tsp nutmeg
1tbsp xylitol, stevia or liquid sweetener
1tsp baking powder
1tsp baking soda


Mix all dry ingredients together in a bowl. Blend wet ingredients (we used a NutriBullet). Pour wet into dry and combine well. Let sit for 15 min before cooking. The mixture should be quick thick. Cook in a greased waffle machine.

Drench them with maple syrup and top with vanilla or peanut butter flavoured Skinny Scoop Ice Cream. Add banana and nuts if you’re feeling festive!

Please note, the consistency is not like your normal waffle and if you’re making it in a waffle machine it will brown, but won’t crisp up. It is more soft and floppy than hard and crunchy.
