Fererro Rocher Bounty Balls

We’re drooling just looking at these delicious coconut balls of heaven! This is the perfect after dinner healthy dessert or the perfect munchie to curb those sweet cravings. They raw, vegan and super easy to prepare!

Coconut filling:

1 cup coconut cream
4T maple syrup
3T coconut oil, melted
2 cups desiccated coconut
Pinch of sea salt

Chocolate coating:

1 cup coconut oil
1/2 cup raw cacao powder
2T maple syrup
100g blanched hazelnuts, crushed
Pinch of sea salt

Mix all the coconut filling ingredients together and place in the freezer for 10 minutes – this will make it easier to roll into balls. Whilst waiting for the coconut filling to harden, make the chocolate coating. Mix all ingredients together, but you can initially try using 3/4 cup coconut oil and after adding the crushed hazelnuts add 1T coconut oil extra at a time to loosen the coating a bit, until the consistency looks like you will be able to dip the balls to coat them.

Roll the coconut filling into balls (about 1T per ball). Place on a plate or board that’s covered with baking paper and place back in the freezer for 10 minutes.

Dip into the chocolate and coat. The chocolate should harden very soon after dipping due to the ‘frozen’ coconut balls. Place back into the freezer until you are ready to munch these delicious treats! Just take out the freezer for roughly 10-15 minutes before serving to soften slightly.

Store in freezer in an airtight container (can last up to 2 weeks).
