Cranberry & Coco Cookies

Guilt free sweet summer cookies! Us wannabe vegans have created yet another quick and easy recipe, perfect for those Sunday baby showers, which have been filling up our calendars recently. Only takes 10 minutes to make and pairs beautifully with a cup of warm rooibos tea! Ooooh, but those tannies are going to be so impressed.

Ingredients: Serves 30

2 cups oats
½ cup dried cranberries
Handful of coconut flakes
1 ½ tsp. cinnamon
½ tsp. baking soda
½ cup chopped toasted walnuts or any nuts/seeds (optional)
1 ½ cups mashed ripe bananas (about 3 large)
⅓ cup coconut oil (melted)

Method:

Add all dry ingredients into a mixing bowl. Mash bananas and add to the dry ingredients along with the coconut oil. Mix well. Set aside for a few minutes.

Preheat oven to 180 C and line baking tray with greaseproof paper. Using a tablespoon, scoop the mixture onto the paper (creating small cookie shaped balls). Bake for about 15 minutes or until lightly golden-brown. Transfer cookies to wire racks to cool completely.
