Coconut Covered Nutty Nibbles

The anticipation is finally over… the recipe is all yours! These coconut covered date balls are filled with crunchy nuts, seeds and gooey goodness that will curb those evil sweet cravings. But oh my word, drench these in a bowl of custard and you’ll have the best dessert known to man – just don’t tell anyone we told you that!



Makes 15 balls

30 dates (pitted)
2/3 handfuls of almonds (raw)
3 Tbsp. pumpkin seeds
3 Tbsp. sunflower seeds
2 Tsp. chia seeds
1 Tsp. cinnamon
4 Tbsp. desiccated coconut
1 Tbsp. macadamia nut butter/almond or peanut butter (optional)
1 Tsp. coconut oil



Soak the dates in boiling water for a few minutes until soft. Place aside. Combine the almonds, pumpkin seeds, sunflower seeds, chia seeds, cinnamon, coconut, macadamia/peanut butter and blend altogether. You can blend to a smooth consistency or leave it chunky for a crunchy texture.


Add this mixture to a pan and heat gently using coconut oil. This will enhance all the flavours from the nuts, seeds and cinnamon. Place the soft dates into a blender with 2 Tbsp. of water to soak them. Blend to a smooth consistency.


Add the date puree and the nut mixture together to make a paste. Scoop out the mixture to make small bite size balls. Coat them in desiccated coconut or sesame seeds. Place them on a tray and into the fridge to set.


Enjoy these in your breakfast bowl with plain yoghurt and a little fruit; as a dessert with coconut ice cream or on their own as a healthy sweet snack.
