5 Simple Snack Recipes

OUR EXPERIENCE

We were challenged by Smartbite to make smart choices and create delicious lunchbox meals for one week. Here we share our top five snacks ideal for when the mid-morning munchies or those 3 O’ Clock sugar cravings:

1.DARK CHOCOLATE AND BANANA BISCUITS

Serve with a cold glass of milk, a creamy cuppa tea or a laanie chai latte.

Ingredients:

2 cups mashed bananas
½ cup sugar free milk Smartbite chocolate
¼ cup cacao
2 tbsp maple syrup
1¼ cups Smartbite gluten-free oats
½ cup Smartbite almond flour
¼ cup Smartbite coconut oil

Method:

Preheat the oven to 180 degrees, mix all the ingredients together, mashing the bananas into the dry ingredients. Should the consistency be too runny, add more almond flour. Roll the mixture into balls and press onto lined baking tray, bake for 15 – 18 minutes until firm.

 2. SEED AND ALMOND LOAF

Serve with Smartbite almond/peanut butter or spread generously with butter.

Ingredients:

1x pack of Smartbite Seed and Almond Loaf
6x eggs
250ml Rooibos Tea

Method:

Preheat the oven to 180 degrees, line a bread tin with coconut oil/butter and a dusting of flour, blend all the ingredients together and place in the tin. Bake for 30-40min.

You will have one happy belly, whipping up this gluten and wheat-free loaf rich in fiber, iron, magnesium, potassium and calcium, boosting heart health, managing blood sugar levels and improving your overall energy levels. Don’t forget the overload of benefits from rooibos tea from curing headaches, insomnia and asthma, whilst reducing bone weakness, allergies, and premature aging.

3.SEED CRACKERS AND AVO DIP

Serve the nutritious seed crackers with a yummy homemade avo dip or hummus.

Ingredients:

1 avo
1 Tbs full cream yogurt
Pinch of salt and pepper
Chili flakes *optional
Squeeze of lemon
1 Tbs of red wine or apple cider vinegar
1 pack of Smartbite seed crackers

Method:

Mash the avo and yogurt together adding a pinch of salt and pepper, a squeeze of lemon, apple cider vinegar and some chili for bite. Ready to serve with your Smartbite seed crackers.

Nutritional benefits:

This protein rich snack is ideal for mid-morning or early afternoon with its rich fiber benefits and high content of Monounsaturated Fatty Acids and potassium.

4.MAPLE CINNAMON ROASTED CHICKPEAS

The perfect crunchy snack, which you can have some fun with, adding different spices and seasoning to suit your taste buds.

Ingredients:

1 cup Chickpeas (cooked)
1/4 tsp Cinnamon
1 Tbs coconut oil
1 Tbs maple syrup
Pinch of salt

Method:

Soak the chickpeas overnight in a large bowl with twice the amount of water and cover with a dish cloth. The next day, drain and rinse the beans in a colander. Place the beans in a large pot covering completely with 2 inches of water above the chickpeas. Come to boil and then reduce heat for 60min. After they are cooked, drain the beans and rinse with cold water and pat dry. Pop them on a baking tray with baking paper and roast for 45 – 50min at 180 degrees. Once cooled roasted, mix in a bowl with ingredients and then pop back into the oven for 10 – 15min.

Nutritional benefits:

Using dried beans is a healthier alternative to canned chickpeas, which contain high-sodium (it’s also cheaper considering how much you get from dried packs). Cinnamon helps reduce blood sugar levels and lowers risk of heart disease.

5.BERRY YOGURT JUICE JAR

This doesn’t have to be a breakfast treat, whip up this yummy jar for an afternoon pick up and to satisfy your 3pm cravings.

Ingredients: 

Fresh raspberries (crush some to form juicy liquid)
Full cream Bulgarian yogurt
1 banana
Smartbite Foods Gluten-Free Granola
Smartbite Cranberries *optional
Smartbite dark/milk sugar-free chocolate *optional

Method:

This jar is so delicious that we haven’t specified quantities – it’s up to your personal preference and jar size. Simply layer the ingredients and top with raspberries allowing the liquid to seep through to the bottom with dark/milk chocolate flakes on top for a tasty gourmet treat!

This yummy jar boasts a healthy dose of protein, calcium, vitamin B-2, vitamin B-12, potassium and magnesium and to top it off, the tasty raspberries are rich in vitamins, antioxidants and fiber!
